Ingredients
- Serving Size : 6
- 2/3 Cup Shortening
- 1 Cup Sugar
- 2 Eggs
- 1 1/2 Cups Mashed Bananas
- 1 Tablespoon Lemon Juice
- 1 3/4 Cups All-Purpose Flour
- 1 Teaspoon Baking Powder
- 1 Teaspoon Salt
- 1/2 Cup Dried Apricots – chopped
Method
- Mixed With 1 Tablespoon Flour
- In large bowl, cream shortening and sugar.
- Beat in eggs 1 at a time, beating well after each addition.
- Blend in bananas and lemon juice.
- Mix together flour, baking soda and salt.
- Blend into banana mixture; stir in apricots.
- Turn into greased and floured 9x5x3 inch loaf pan.
- Bake in 325 degree oven 1 hour and 10 to 20 minutes, or until cake tester inserted in center comes out clean.
- Remove from pan and cool.
- Sift confectioners’ sugar over top, if desired, before serving.
