Apricot Banana Bread Recipe

Ingredients

  • Serving Size : 6
  • 2/3 Cup Shortening
  • 1 Cup Sugar
  • 2 Eggs
  • 1 1/2 Cups Mashed Bananas
  • 1 Tablespoon Lemon Juice
  • 1 3/4 Cups All-Purpose Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Salt
  • 1/2 Cup Dried Apricots – chopped

Method

  1. Mixed With 1 Tablespoon Flour
  2. In large bowl, cream shortening and sugar.
  3. Beat in eggs 1 at a time, beating well after each addition.
  4. Blend in bananas and lemon juice.
  5. Mix together flour, baking soda and salt.
  6. Blend into banana mixture; stir in apricots.
  7. Turn into greased and floured 9x5x3 inch loaf pan.
  8. Bake in 325 degree oven 1 hour and 10 to 20 minutes, or until cake tester inserted in center comes out clean.
  9. Remove from pan and cool.
  10. Sift confectioners’ sugar over top, if desired, before serving.
