Ingredients
Servings : 4-6 dishes.
- 2 cups all purpose flour
- 3/4 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon ground ginger
- 1/2 cup golden raisins
- 1/2 cup chopped walnuts
- 4 tablespoons olive oil
- 1 1/2 cups applesauce
- 1 pinch of salt
- 1 teaspoon vanilla extract
Method
- In a bowl, mix the flour, sugar, baking soda and baking powder, as well as cinnamon and ground ginger
- Mix in the raisins and walnuts then stir in the applesauce, olive oil and vanilla extract, as well as a pinch of salt
- Pour this batter into a round cake pan lined with baking paper
- Bake in a preheated oven at 350F for 30-40 minutes
- Let cool in the pan then sprinkle with powdered sugar and serve cut into slices
