Ingredients
Makes 6 servings
- 3 Granny Smith apples, peeled, cored and shredded
- 2 ripe pears, peeled, cored and cut into 1/4-inch slices
- 2 teaspoons fresh lemon juice
- 1/2 cup plus 2 tablespoons sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 tablespoons canola or other neutral oil
- 1/2 cup plain or vanilla soy milk
Method
- Preheat the oven to 400°F
- Grease a 9-inch square baking pan
- Spread the apples and pears in the prepared pan
- Sprinkle with the lemon juice and toss to coat
- Stir in 1/2 cup of the sugar, cornstarch, cinnamon and allspice, stirring to mix
- In a medium bowl, combine the flour, the remaining 2 tablespoons sugar, the baking powder and the salt
- Add the oil and mix with a fork until the mixture resembles coarse crumbs
- Mix in the soy milk
- Spread the topping over the fruit
- Bake until golden, about 30 minutes
- Serve warm
