Apple Pear Cobbler Recipe

Ingredients

Makes 6 servings

  • 3 Granny Smith apples, peeled, cored and shredded
  • 2 ripe pears, peeled, cored and cut into 1/4-inch slices
  • 2 teaspoons fresh lemon juice
  • 1/2 cup plus 2 tablespoons sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons canola or other neutral oil
  • 1/2 cup plain or vanilla soy milk

Method

  1. Preheat the oven to 400°F
  2. Grease a 9-inch square baking pan
  3. Spread the apples and pears in the prepared pan
  4. Sprinkle with the lemon juice and toss to coat
  5. Stir in 1/2 cup of the sugar, cornstarch, cinnamon and allspice, stirring to mix
  6. In a medium bowl, combine the flour, the remaining 2 tablespoons sugar, the baking powder and the salt
  7. Add the oil and mix with a fork until the mixture resembles coarse crumbs
  8. Mix in the soy milk
  9. Spread the topping over the fruit
  10. Bake until golden, about 30 minutes
  11. Serve warm
