Ingredients
Makes 6 to 8 servings
- 1 Granny Smith apple, peeled, cored and shredded
- 1 tablespoon fresh lemon juice
- 1 cup soy milk
- 1/4 cup canola or grapeseed oil
- 2 cups all-purpose flour
- ¾ cup sugar
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
Method
- Preheat the oven to 350°F
- Lightly oil a 9-inch square baking pan and set aside
- In a medium bowl, combine the apple and lemon juice and toss well to coat
- Stir in the soy milk and oil
- Mix well and set aside
- In a large bowl, mix the flour, sugar, baking powder, cinnamon and salt
- Add the wet ingredients to the dry ingredients and mix to combine
- Pour the batter into the prepared pan
- Bake until golden brown and a toothpick inserted in the center comes out clean, about 1 hour
- Cool in the pan on a wire rack for 20 minutes before serving
