- 13/4 cups oat flour or whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- pinch of sea salt
- 2 teaspoons ground cinnamon
- 2 eggs, preferably at room temperature
- 1 teaspoon vanilla extract
- 1/2 cup coconut sugar
- 1/3 cup melted coconut oil or olive oil
- 1/2 cup unsweetened almond milk or 2% Greek yogurt or coconut milk, plus more if needed
- 1/2 cup unsweetened applesauce
- 1 cup grated red or green apple
- cooking spray or coconut oil
For the topping (optional)
- 2/3 cup quick oats
- 1/3 cup chopped walnuts or pecans
- 1/3 cup coconut sugar
- 1 teaspoon ground cinnamon
- 2 tablespoons solid coconut oil
Method
- Preheat the oven to 350° F
- Coat a muffin tin with cooking spray or coconut oil
- In a large bowl, mix together the oat flour, baking powder, baking soda, salt, and cinnamon
- In a larger bowl, whisk the eggs together with the vanilla extract and sugar
- Add the coconut oil, almond milk, and applesauce and whisk together
- Slowly fold in the dry ingredients, then add the grated apple
- If the batter is too thick, add almond milk one tablespoon at a time until you reach the desired consistency, like a waffle batter
- Evenly divide the mixture among the prepared molds, filling them two-thirds full
- To make the topping (if using), mix together the oats, walnuts, sugar, and cinnamon
- Once combined, add the solid coconut oil and, using your fingers, massage it into the mixture to create a lumpy texture
- Top each muffin with a spoonful of topping
- Bake in the oven for about 25 to 30 minutes, or until the muffins are golden brown and a toothpick inserted in a muffin comes out clean
- Allow the muffins to cool slightly before removing from the molds
- Repeat
