Apple Cobbler Muffins Recipe

  • 13/4 cups oat flour or whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • pinch of sea salt
  • 2 teaspoons ground cinnamon
  • 2 eggs, preferably at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup coconut sugar
  • 1/3 cup melted coconut oil or olive oil
  • 1/2 cup unsweetened almond milk or 2% Greek yogurt or coconut milk, plus more if needed
  • 1/2 cup unsweetened applesauce
  • 1 cup grated red or green apple
  • cooking spray or coconut oil

For the topping (optional)

  • 2/3 cup quick oats
  • 1/3 cup chopped walnuts or pecans
  • 1/3 cup coconut sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons solid coconut oil

Method

  1. Preheat the oven to 350° F
  2. Coat a muffin tin with cooking spray or coconut oil
  3. In a large bowl, mix together the oat flour, baking powder, baking soda, salt, and cinnamon
  4. In a larger bowl, whisk the eggs together with the vanilla extract and sugar
  5. Add the coconut oil, almond milk, and applesauce and whisk together
  6. Slowly fold in the dry ingredients, then add the grated apple
  7. If the batter is too thick, add almond milk one tablespoon at a time until you reach the desired consistency, like a waffle batter
  8. Evenly divide the mixture among the prepared molds, filling them two-thirds full
  9. To make the topping (if using), mix together the oats, walnuts, sugar, and cinnamon
  10. Once combined, add the solid coconut oil and, using your fingers, massage it into the mixture to create a lumpy texture
  11. Top each muffin with a spoonful of topping
  12. Bake in the oven for about 25 to 30 minutes, or until the muffins are golden brown and a toothpick inserted in a muffin comes out clean
  13. Allow the muffins to cool slightly before removing from the molds
  14. Repeat
