Ingredients
- 1 tbsp. olive oil
- 1/2 lb. smoked sausage, sliced 1/2 inch thick
- 1 qt. chicken broth
- 1 med. onion, thinly sliced
- 3 med. potatoes, sliced (peeled or unpeeled)
- 1 lg. (1 lb.) Kale shredded or sliced very thin
- salt, pepper to taste.
Method
- Heat oil, saute the sausage just until the fat is rendered (3 to 5 minutes)
- Drain on paper towel and reserve
- Bring broth to a boil with onions and potatoes and simmer 10 to 15 minutes until potatoes tender
- Mash the onions and potatoes in broth with potato masher
- Add drained sausage and Kale
- Bring to a boil and simmer until kale tender
- Taste for seasoning
- Serve piping hot with crusty bread, beer or red wine
