Almond Cranberry Muffins Recipe

Ingredients

Servings : 12 muffins.

  • 2 cups rolled oats
  • 1 ripe banana, mashed
  • 1 cup pumpkin puree
  • ¼ cup almond butter
  • ¼ cup almond milk
  • ¼ cup maple syrup
  • ½ cup dried cranberries, chopped
  • ¼ teaspoon cinnamon powder
  • 1 pinch salt
  • ½ teaspoon baking soda
  • ½ cup sliced almonds :For topping

Method

  1. Mix the mashed banana with the pumpkin puree, almond butter, almond milk, and maple syrup
  2. Stir in the rolled oats, cranberries, cinnamon, and salt as well as the baking soda
  3. Spoon the mixture into your muffin cups and top with sliced almonds
  4. Bake in a preheated oven at 350°F for 25-30 minutes or until crunchy and golden brown
  5. Allow the muffins to cool in the pan before serving
