Ingredients
Servings : 12 muffins.
- 2 cups rolled oats
- 1 ripe banana, mashed
- 1 cup pumpkin puree
- ¼ cup almond butter
- ¼ cup almond milk
- ¼ cup maple syrup
- ½ cup dried cranberries, chopped
- ¼ teaspoon cinnamon powder
- 1 pinch salt
- ½ teaspoon baking soda
- ½ cup sliced almonds :For topping
Method
- Mix the mashed banana with the pumpkin puree, almond butter, almond milk, and maple syrup
- Stir in the rolled oats, cranberries, cinnamon, and salt as well as the baking soda
- Spoon the mixture into your muffin cups and top with sliced almonds
- Bake in a preheated oven at 350°F for 25-30 minutes or until crunchy and golden brown
- Allow the muffins to cool in the pan before serving
