Air Fryer Three-Cheese Zucchini Boats Recipe

Ingredients

SERVES 2.

  • 2 medium zucchini
  • 1 tablespoon avocado oil
  • 1/4 cup low-carb, no-sugar-added pasta sauce
  • 1/4 cup full-fat ricotta cheese
  • 1/4 cup shredded mozzarella cheese
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 2 tablespoons grated vegetarian Parmesan cheese

Method

  1. Cut off 1 from the top and bottom of each zucchini
  2. Slice zucchini in half lengthwise and use a spoon to scoop out a bit of the inside, making room for filling
  3. Brush with oil and spoon 2 tablespoons pasta sauce into each shell
  4. In a medium bowl, mix ricotta, mozzarella, oregano, garlic powder, and parsley
  5. Spoon the mixture into each zucchini shell
  6. Place stuffed zucchini shells into the air fryer basket
  7. Adjust the temperature to 350°F and set the timer for 20 minutes
  8. To remove from the fryer basket, use tongs or a spatula and carefully lift out
  9. Top with Parmesan
  10. Serve immediately
