Ingredients
SERVES 4.
- 2 medium artichokes, trimmed and quartered, center removed
- 2 tablespoons coconut oil
- 1 large egg, beaten
- 1/2 cup grated vegetarian Parmesan cheese
- 1/4 cup blanched finely ground almond flour
- 1/2 teaspoon crushed red pepper flakes
Method
- In a large bowl, toss artichokes in coconut oil and then dip each piece into the egg
- Mix the Parmesan and almond flour in a large bowl
- Add artichoke pieces and toss to cover as completely as possible, sprinkle with pepper flakes
- Place into the air fryer basket
- Adjust the temperature to 400°F and set the timer for 10 minutes
- Toss the basket two times during cooking
- Serve warm
