Ingredients
SERVES 4.
- 2 cups cooked spaghetti squash
- 2 tablespoons unsalted butter, softened
- 1 large egg
- 1/4 cup blanched finely ground almond flour
- 2 stalks green onion, sliced
- 1/2 teaspoon garlic powder
- 1 teaspoon dried parsley
Method
- Remove excess moisture from the squash using a cheesecloth or kitchen towel
- Mix all ingredients in a large bowl
- Form into four patties
- Cut a piece of parchment to fit your air fryer basket
- Place each patty on the parchment and place into the air fryer basket
- Adjust the temperature to 400°F and set the timer for 8 minutes
- Flip the patties halfway through the cooking time
- Serve warm
