Ingredients
SERVES 2.
- 6 large portobello mushroom caps
- 1/2 pound Italian sausage
- 1/4 cup chopped onion
- 2 tablespoons blanched finely ground almond flour
- 1/4 cup grated Parmesan cheese
- 1 teaspoon minced fresh garlic
Method
- Use a spoon to hollow out each mushroom cap, reserving scrapings
- In a medium skillet over medium heat, brown the sausage about 10 minutes or until fully cooked and no pink remains
- Drain and then add reserved mushroom scrapings, onion, almond flour, Parmesan, and garlic
- Gently fold ingredients together and continue cooking an additional minute, then remove from heat
- Evenly spoon the mixture into mushroom caps and place the caps into a 6 round pan
- Place pan into the air fryer basket
- Adjust the temperature to 375°F and set the timer for 8 minutes
- When finished cooking, the tops will be browned and bubbling
- Serve warm
