Ingredients
YIELD s 16 meatballs (4 per serving).:
- 1 pound 80/20 ground beef
- 1/4 cup blanched finely ground almond flour
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 large egg
- 3 ounces low-moisture, whole-milk mozzarella, cubed
- 1/2 cup low-carb, no-sugar-added pasta sauce
- 1/4 cup grated Parmesan cheese
Method
- In a large bowl, add ground beef, almond flour, parsley, garlic powder, onion powder, and egg
- Fold ingredients together until fully combined
- Form the mixture into 2 balls and use your thumb or a spoon to create an indent in the center of each meatball
- Place a cube of cheese in the center and form the ball around it
- Place the meatballs into the air fryer, working in batches if necessary
- Adjust the temperature to 350°F and set the timer for 15 minutes
- Meatballs will be slightly crispy on the outside and fully cooked when at least 180°F internally
- When they are finished cooking, toss the meatballs in the sauce and sprinkle with grated Parmesan for serving
