Air Fryer Mozzarella-Stuffed Meatballs Recipe

Ingredients

YIELD s 16 meatballs (4 per serving).:

  • 1 pound 80/20 ground beef
  • 1/4 cup blanched finely ground almond flour
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 large egg
  • 3 ounces low-moisture, whole-milk mozzarella, cubed
  • 1/2 cup low-carb, no-sugar-added pasta sauce
  • 1/4 cup grated Parmesan cheese

Method

  1. In a large bowl, add ground beef, almond flour, parsley, garlic powder, onion powder, and egg
  2. Fold ingredients together until fully combined
  3. Form the mixture into 2 balls and use your thumb or a spoon to create an indent in the center of each meatball
  4. Place a cube of cheese in the center and form the ball around it
  5. Place the meatballs into the air fryer, working in batches if necessary
  6. Adjust the temperature to 350°F and set the timer for 15 minutes
  7. Meatballs will be slightly crispy on the outside and fully cooked when at least 180°F internally
  8. When they are finished cooking, toss the meatballs in the sauce and sprinkle with grated Parmesan for serving
