Air Fryer Ground Beef Taco Rolls Recipe

Ingredients

SERVES 4.

  • 1/2 pound 80/20 ground beef
  • 1/3 cup water
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 cup canned diced tomatoes and chiles, drained
  • 2 tablespoons chopped cilantro
  • 11/2 cups shredded mozzarella cheese
  • 1/2 cup blanched finely ground almond flour
  • 2 ounces full-fat cream cheese
  • 1 large egg

Method

  1. In a medium skillet over medium heat, brown the ground beef about 7-10 minutes
  2. When meat is fully cooked, drain
  3. Add water to skillet and stir in chili powder, cumin, garlic powder, oregano, and tomatoes with chiles
  4. Add cilantro
  5. Bring to a boil, then reduce heat to simmer for 3 minutes
  6. In a large microwave-safe bowl, place mozzarella, almond flour, cream cheese, and egg
  7. Microwave for 1 minute
  8. Stir the mixture quickly until smooth ball of dough forms
  9. Cut a piece of parchment for your work surface
  10. Press the dough into a large rectangle on the parchment, wetting your hands to prevent the dough from sticking as necessary
  11. Cut the dough into eight rectangles
  12. On each rectangle place a few spoons of the meat mixture
  13. Fold the short ends of each roll toward the center and roll the length as you would a burrito
  14. Cut a piece of parchment to fit your air fryer basket
  15. Place taco rolls onto the parchment and place into the air fryer basket
  16. Adjust the temperature to 360°F and set the timer for 10 minutes
  17. Flip halfway through the cooking time
  18. Allow to cool 10 minutes before serving
