Air Fryer Ground Beef Taco Rolls Recipe
Ingredients
SERVES 4.
- 1/2 pound 80/20 ground beef
- 1/3 cup water
- 1 tablespoon chili powder
- 2 teaspoons cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 1/4 cup canned diced tomatoes and chiles, drained
- 2 tablespoons chopped cilantro
- 11/2 cups shredded mozzarella cheese
- 1/2 cup blanched finely ground almond flour
- 2 ounces full-fat cream cheese
- 1 large egg
Method
- In a medium skillet over medium heat, brown the ground beef about 7-10 minutes
- When meat is fully cooked, drain
- Add water to skillet and stir in chili powder, cumin, garlic powder, oregano, and tomatoes with chiles
- Add cilantro
- Bring to a boil, then reduce heat to simmer for 3 minutes
- In a large microwave-safe bowl, place mozzarella, almond flour, cream cheese, and egg
- Microwave for 1 minute
- Stir the mixture quickly until smooth ball of dough forms
- Cut a piece of parchment for your work surface
- Press the dough into a large rectangle on the parchment, wetting your hands to prevent the dough from sticking as necessary
- Cut the dough into eight rectangles
- On each rectangle place a few spoons of the meat mixture
- Fold the short ends of each roll toward the center and roll the length as you would a burrito
- Cut a piece of parchment to fit your air fryer basket
- Place taco rolls onto the parchment and place into the air fryer basket
- Adjust the temperature to 360°F and set the timer for 10 minutes
- Flip halfway through the cooking time
- Allow to cool 10 minutes before serving
