Ingredients
SERVES 2.
- 1 tablespoon coconut oil
- 2 (4-ounce) pork chops, chopped into 1 cubes
- 2 teaspoons chili powder
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 4 cups chopped romaine
- 1 medium Roma tomato, diced
- 1/2 cup shredded Monterey jack cheese
- 1 medium avocado, peeled, pitted, and diced
- 1/4 cup full-fat ranch dressing
- 1 tablespoon chopped cilantro
Method
- In a large bowl, drizzle coconut oil over pork
- Sprinkle with chili powder, paprika, garlic powder, and onion powder
- Place pork into the air fryer basket
- Adjust the temperature to 400°F and set the timer for 8 minutes
- Pork will be golden and crispy when fully cooked
- In a large bowl, place romaine, tomato, and crispy pork
- Top with shredded cheese and avocado
- Pour ranch dressing around bowl and toss the salad to evenly coat
- Top with cilantro
- Serve immediately
