Ingredients
SERVES 6.
- 1 cup blanched finely ground almond flour
- 1/4 cup salted butter, melted
- 1/2 cup plus 1 tablespoon granular erythritol
- 1 teaspoon vanilla extract
- 1/4 cup full-fat mayonnaise
- 1/4 cup unsweetened cocoa powder
- 2 large eggs
Method
- In a large bowl, mix all ingredients until smooth
- Pour batter into a 6 round baking pan
- Place into the air fryer basket
- Adjust the temperature to 300°F and set the timer for 25 minutes
- When done, a toothpick inserted in center will come out clean
- Allow cake to cool completely, or it will crumble when moved
