Ingredients
SERVES 4.
- 1 pound ground chicken thigh meat
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon dried parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 large egg
- 2 ounces pork rinds, finely ground
Method
- In a large bowl, mix ground chicken, mozzarella, parsley, garlic powder, and onion powder
- Form into four patties
- Place patties in the freezer for 15-20 minutes until they begin to firm up
- Whisk egg in a medium bowl
- Place the ground pork rinds into a large bowl
- Dip each chicken patty into the egg and then press into pork rinds to fully coat
- Place patties into the air fryer basket
- Adjust the temperature to 360°F and set the timer for 12 minutes
- Patties will be firm and cooked to an internal temperature of 165°F when done
- Serve immediately
