Air Fryer Chicken Enchiladas Recipe

Ingredients

SERVES 4.

  • 11/2 cups shredded cooked chicken
  • 1/3 cup low-carb enchilada sauce, divided
  • 1/2 pound medium-sliced deli chicken
  • 1 cup shredded medium Cheddar cheese
  • 1/2 cup shredded Monterey jack cheese
  • 1/2 cup full-fat sour cream
  • 1 medium avocado, peeled, pitted, and sliced

Method

  1. In a large bowl, mix shredded chicken and half of the enchilada sauce
  2. Lay slices of deli chicken on a work surface and spoon 2 tablespoons shredded chicken mixture onto each slice
  3. Sprinkle 2 tablespoons of Cheddar onto each roll
  4. Gently roll closed
  5. In a 4-cup round baking dish, place each roll, seam side down
  6. Pour remaining sauce over rolls and top with Monterey jack
  7. Place dish into the air fryer basket
  8. Adjust the temperature to 370°F and set the timer for 10 minutes
  9. Enchiladas will be golden on top and bubbling when cooked
  10. Serve warm with sour cream and sliced avocado
