Ingredients
SERVES 4.
- 2 tablespoons salted butter
- 1/4 cup diced white onion
- 1/2 teaspoon minced garlic
- 1/2 cup heavy whipping cream
- 2 ounces full-fat cream cheese
- 1 cup shredded sharp Cheddar cheese
- 2 medium zucchini, spiralized
Method
- In a large saucepan over medium heat, melt butter
- Add onion and saute until it begins to soften, 1-3 minutes
- Add garlic and saute 30 seconds, then pour in cream and add cream cheese
- Remove the pan from heat and stir in Cheddar
- Add the zucchini and toss in the sauce, then put into a 4-cup round baking dish
- Cover the dish with foil and place into the air fryer basket
- Adjust the temperature to 370°F and set the timer for 8 minutes
- After 6 minutes remove the foil and let the top brown for remaining cooking time
- Stir and serve
