Ingredients
SERVES 4.
- 4 tablespoons salted butter
- 1/2 medium lemon
- 1 teaspoon minced roasted garlic
- 1/4 cup heavy whipping cream
- 1/4 teaspoon xanthan gum
- 1/4 teaspoon red pepper flakes
- 1 pound medium peeled and deveined shrimp
- 1 tablespoon chopped fresh parsley
Method
- In a medium saucepan over medium heat, melt butter
- Zest the lemon, then squeeze juice into the pan
- Add garlic
- Pour in the cream, xanthan gum, and red pepper flakes
- Whisk until the mixture begins to thicken, about 2-3 minutes
- Place shrimp into a 4-cup round baking dish
- Pour the cream sauce over the shrimp and cover with foil
- Place the dish into the air fryer basket
- Adjust the temperature to 400°F and set the timer for 8 minutes
- Stir twice during cooking
- When done, garnish with parsley and serve warm
