Ingredients
Makes about 2 cups
- 1/3 cup agave nectar
- 1 1/2 tablespoons vegan margarine
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1 teaspoon pure vanilla extract
- 2 cups pecan halves
Method
- In a medium skillet, combine the agave nectar, margarine, cinnamon and salt
- Cook over medium heat, stirring until the mixture turns an amber color and thickens
- Add the vanilla and the pecans, stirring gently until the nuts are coated with the glaze
- Quickly transfer the nuts to a nonstick baking sheet and spread in a single layer to cool completely before serving
- These are best eaten on the day they are made but, once cooled, they can be covered and stored at room temperature for 2 to 3 days
