Ingredients
- 1 kg boneless unsmoked gammon joint
- 1 onion, halved
- 1 tbsp black peppercorns
- 1 tsp cloves
For the glaze
- 1 tbsp English mustard
- 70g clear honey
- 2 tbsp soft dark brown sugar
Method

Remove the rind, leaving a little fat underneath.

Optionally brush with a small amount of honey/sugar and refrigerate 2 hours.
- Score with a sharp knife

Decorate with cloves/peppercorns if liked
- Glaze while air fryer preheats

Place in air fryer at 180 degrees centigrade for 20 minutes.

Glaze again and cook 20 more minutes.

Add more glaze if needed and then pop back in the air fryer for five minutes increasing the temperature a little.

Remove and cover in foil to cool.
