Ingredients
Makes about 2 1/2 cups
- 2 ripe Roma or plum tomatoes, chopped
- 1 jarred roasted red pepper, chopped
- 1 (14-ounce) can artichoke hearts, drained and chopped
- 3 green onions, minced
- 1 tablespoon capers
- 2 tablespoons minced fresh parsley
- 1/2 teaspoon fresh or dried oregano
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- freshly ground black pepper
Method
- In a large bowl, combine all the ingredients
- Set aside at room temperature for 30 to 45 minutes before serving
- This relish is best if used on the same day it is made
