Pineapple-Papaya Salsa Recipe

Ingredients

Makes about 3 cups

  • 2 cups chopped fresh pineapple
  • 1 ripe papaya, peeled, seeded and cut into 1/4-inch dice
  • 1/2 cup minced red onion
  • 1/4 cup chopped fresh cilantro or parsley
  • 2 tablespoons fresh lime juice
  • 1 teaspoon cider vinegar
  • 2 teaspoons sugar
  • 1/4 teaspoon salt
  • 1 small hot red chile, seeded and minced

Method

  1. In a glass bowl, combine all the ingredients, mix well, cover and set aside at room temperature for 30 minutes before serving or refrigerate until ready to use
  2. This salsa tastes best if used on the same day it is made, but properly stored, it will keep for up to 2 days
