Ingredients
Makes about 2 1/2 cups
- 1 ripe mango, peeled, pitted and cut into 1/4-inch dice
- 1/3 cup minced red onion
- 1 small red bell pepper, chopped
- 1 small jalapeno, seeded and minced
- 2 tablespoons chopped fresh parsley or cilantro
- 1 tablespoon olive oil
- 1 tablespoon fresh lime juice
- salt
Method
- In a glass bowl, combine all the ingredients, mix well, cover and set aside for 30 minutes before serving
- If not using right away, refrigerate until ready to use
- This salsa tastes best if used on the same day it is made, but properly stored, it will keep for up to 2 days
