Ingredients
Makes about 1 cup
- 1 cup fresh mint leaves, packed
- 1 fresh or dried hot red chile
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/2 cup grated fresh coconut
Method
- In a blender or food processor, combine the mint, chile, lemon juice and salt and process to a paste
- Add the coconut and process until blended
- This chutney is best if used on the same day that it is made
