Ingredients
Makes about 1¾ cups
- 2 tablespoons tamarind paste
- 1 cup warm water, plus or more if needed
- 1/3 cup pitted dates
- 1/3 cup sugar
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cayenne
Method
- In a blender or food processor, combine all the ingredients and process until smooth
- Taste, adjusting seasonings if necessary and add more water if needed for desired consistency
- Transfer to a small bowl
- If not using right away, cover and refrigerate until needed
- Properly stored, the sauce will keep for 2 to 3 days
