Ingredients
Makes 4 to 6 servings
- 1 quart chilled vanilla soy milk or other nondairy milk
- 1 cup vanilla vegan ice cream
- 1 tablespoon pure maple syrup
- 1 teaspoon pure vanilla extract
- 3 tablespoons dark rum, or more to taste
- 1/4 teaspoon ground nutmeg, plus more to garnish
Method
- In a blender or food processor, combine all the ingredients and blend until smooth and creamy
- Pour into eggnog cups and garnish with nutmeg
- Serve immediately
- Alternatively, you can prepare the Nog ahead of time and refrigerate until ready to serve
- Just be sure to stir or whisk it well before serving
