Ingredients
Makes 4 servings
- 3 tablespoons olive oil
- 1 small yellow onion, minced
- 1 small red bell pepper, chopped
- 3 leftover baked potatoes, peeled and cut into 1/2-inch dice
- 1/2 teaspoon sweet or smoked paprika
- salt and freshly ground black pepper
Method
- In a large skillet, heat the oil over medium heat
- Add the onion, cover and cook until softened, about 5 minutes
- Add the bell pepper and cook for 2 minutes to soften slightly
- Add the potatoes and paprika and season with salt and pepper
- Cook until nicely browned, turning occasionally, about 15 minutes
- Serve hot
