Ingredients
Makes 4 servings
- 1 ripe banana
- 1/2 cup creamy peanut butter
- 1/4 cup light brown sugar
- 2 teaspoons pure maple syrup
- 16 slices French bread or 8 slices Italian bread, cut into 1/2-inch slices
- 1 cup soy milk
- 3 tablespoons all-purpose flour
- 1 teaspoon pure vanilla extract
- 2 tablespoons vegan margarine, plus more if needed
Method
- In a medium bowl, mash the banana
- Add the peanut butter, sugar and maple syrup, stirring to mix well
- Preheat the oven to 225°F
- Spread 1 to 2 tablespoons of the peanut butter-banana mixture onto half of the bread slices, then top each with one of the remaining bread slices
- In a shallow bowl, whisk together the soy milk, flour and vanilla
- Place a sandwich in the batter
- Let it soak for about 5 seconds
- Turn the sandwich over and let it soak another 5 seconds
- Repeat with the remaining sandwiches
- On a griddle or large skillet, melt the margarine over medium heat
- Cook the stuffed bread slices until golden brown on both sides, about 4 minutes per side
- Transfer the cooked French toast warm to a heatproof platter and keep warm in the oven while cooking the rest
