Pineapple-Apricot Sauce Recipe

Ingredients

Makes about 2 cups

  • 1 cup dried apricots
  • 1 cup water
  • 1 cup unsweetened pineapple juice

Method

  1. In a medium saucepan, combine the apricots and water
  2. Cover and bring to a boil over high heat, then reduce heat to low and simmer for 20 minutes
  3. Remove from the burner and set aside to cool, about 15 minutes
  4. Transfer the soaked apricots to a blender or food processor and process until smooth
  5. Add the pineapple juice and process again
  6. If serving warm, pour the sauce back into the saucepan and heat until warm
  7. If serving chilled, pour the sauce into a bowl and refrigerate until chilled, 1 hour
  8. Store leftover sauce covered in the refrigerator for up to 3 days
