Ingredients
Makes about 2 cups
- 1 cup dried apricots
- 1 cup water
- 1 cup unsweetened pineapple juice
Method
- In a medium saucepan, combine the apricots and water
- Cover and bring to a boil over high heat, then reduce heat to low and simmer for 20 minutes
- Remove from the burner and set aside to cool, about 15 minutes
- Transfer the soaked apricots to a blender or food processor and process until smooth
- Add the pineapple juice and process again
- If serving warm, pour the sauce back into the saucepan and heat until warm
- If serving chilled, pour the sauce into a bowl and refrigerate until chilled, 1 hour
- Store leftover sauce covered in the refrigerator for up to 3 days
