Ingredients
Makes 4 servings
- 2 or 3 limes
- 3 tablespoons light brown sugar
- 1/3 cup water
- 4 ripe bananas
- 2 tablespoons vegan margarine
- 2 tablespoons crushed unsalted roasted cashews or peanuts
- 2 tablespoons shredded sweetened coconut
Method
- Preheat the oven to 350°F
- Use a channel zester to remove 4 long strips of peel from the limes
- Twist the strips and set aside to use as garnish
- Juice and zest the limes to yield 2 tablespoons of juice and 1 teaspoon of fine zest
- Set aside
- In a small saucepan, combine the sugar and water and bring to a boil
- Reduce heat to low and simmer for 30 seconds, stirring to dissolve the sugar
- Remove from the heat and add the reserved lime juice and zest
- Set aside
- Cut the bananas in half lengthwise and arrange in a shallow baking dish (an oval gratin dish works well)
- Pour on the sugar syrup and dot with bits of the margarine
- Sprinkle with cashews and coconut and bake for 20 minutes, basting occasionally
- Serve garnished with the reserved lime twists
