Baked Bananas With A Twist Of Lime Recipe

Ingredients

Makes 4 servings

  • 2 or 3 limes
  • 3 tablespoons light brown sugar
  • 1/3 cup water
  • 4 ripe bananas
  • 2 tablespoons vegan margarine
  • 2 tablespoons crushed unsalted roasted cashews or peanuts
  • 2 tablespoons shredded sweetened coconut

Method

  1. Preheat the oven to 350°F
  2. Use a channel zester to remove 4 long strips of peel from the limes
  3. Twist the strips and set aside to use as garnish
  4. Juice and zest the limes to yield 2 tablespoons of juice and 1 teaspoon of fine zest
  5. Set aside
  6. In a small saucepan, combine the sugar and water and bring to a boil
  7. Reduce heat to low and simmer for 30 seconds, stirring to dissolve the sugar
  8. Remove from the heat and add the reserved lime juice and zest
  9. Set aside
  10. Cut the bananas in half lengthwise and arrange in a shallow baking dish (an oval gratin dish works well)
  11. Pour on the sugar syrup and dot with bits of the margarine
  12. Sprinkle with cashews and coconut and bake for 20 minutes, basting occasionally
  13. Serve garnished with the reserved lime twists
