Sweet Vermicelli Pudding Recipe

Ingredients

Makes 4 to 6 servings

  • 2 tablespoons vegan margarine
  • 6 ounces seven noodles, vermicelli noodles, or angel hair pasta
  • 1/2 cup toasted slivered almonds
  • 1/2 cup unsalted shelled pistachio nuts
  • 2 cups plain or vanilla soy milk
  • 1 cup unsweetened coconut milk
  • 1/4 cup sugar
  • 1/4 cup golden raisins
  • 1/2 teaspoon ground cardamom
  • 1 1/2 teaspoons rosewater or pure vanilla extract

Method

  1. In a large skillet, heat the margarine over medium heat
  2. Break the noodles into 2-inch pieces and add them to the skillet along with 1/4 cup each of the almonds and pistachios
  3. Cook, stirring, until the noodles turn golden
  4. Do not brown
  5. Stir in the soy milk and coconut milk and bring to simmer
  6. Add the sugar, raisins and cardamom and simmer for 10 minutes
  7. Stir in the rosewater, then transfer to a serving dish and sprinkle with the remaining almonds and pistachios
  8. Serve warm or at room temperature
