Indian Pudding Recipe

Ingredients

Makes 6 servings

  • 31/2 cups plain or vanilla soy milk
  • 1/2 cup sugar
  • 1/2 cup dark molasses
  • 1/2 cup yellow cornmeal
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger

Method

  1. Preheat the oven to 350°F
  2. Grease a 2-quart gratin dish or 9-inch square baking pan and set aside
  3. In a large saucepan, combine the soy milk, sugar and molasses over medium heat and cook, stirring, until blended
  4. Slowly add the cornmeal, whisking to incorporate
  5. Cook, stirring until thickened, 5 to 7 minutes
  6. Stir in the salt, allspice, cinnamon and ginger and remove from the heat
  7. Pour the mixture into the prepared pan
  8. Bake until the center is set, about 1 hour
