Ingredients
Makes 8 servings
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup sugar
- 1/3 cup applesauce
- 1 Granny Smith apple, peeled, cored and shredded
- 1/3 cup dried apples, finely chopped
- 2 tablespoons canola or other neutral oil
- 1/2 cup confectioners sugar
- 2 teaspoons apple juice
Method
- Preheat the oven to 350°F
- Grease an 8-inch square baking pan and set aside
- In a large bowl, combine the flour, baking powder and salt
- In a medium bowl, combine the sugar, applesauce, fresh apple, dried apples and oil
- Add the wet ingredients to the dry ingredients and stir just until moistened
- Spread the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 45 minutes
- Remove from the oven and let cool in the pan for 15 minutes, then invert onto a wire rack to cool completely
- In a small bowl, combine the confectioners sugar and apple juice and blend until smooth, then drizzle over the cake
