Ingredients
Makes 8 to 10 servings
- 2 cups all-purpose flour
- 1 cup sugar
- ¾ cup unsweetened cocoa powder
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- ¾ cup plain or vanilla soy milk
- 1/4 cup canola or other neutral oil
- 2 teaspoons pure vanilla extract
- 1 cup sugar
- 21/4 cups hot water
Method
- Preheat the oven to 350°F
- Lightly oil a 9 x 13-inch baking pan
- Set aside
- In a large bowl, combine the flour, sugar, 1/4 cup of the cocoa, baking powder and salt
- Mix to combine and set aside
- In a medium bowl, combine the soy milk, oil and vanilla
- Pour the liquid ingredients into the dry ingredients and mix until blended
- Spread the batter into the prepared baking pan
- In a separate medium bowl, combine the sugar, the remaining 1/2 cup of cocoa and the water
- Stir to blend, then pour the mixture over the top of the cake (do not mix)
- Bake until a toothpick inserted in the center comes out clean, about 45 minutes
- Cool in the pan on a wire rack to cool completely for 60 minutes before slicing
