Mystery Chocolate Cake Recipe

Ingredients

Makes 8 to 10 servings

  • 2 cups all-purpose flour
  • 1 cup sugar
  • ¾ cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • ¾ cup plain or vanilla soy milk
  • 1/4 cup canola or other neutral oil
  • 2 teaspoons pure vanilla extract
  • 1 cup sugar
  • 21/4 cups hot water

Method

  1. Preheat the oven to 350°F
  2. Lightly oil a 9 x 13-inch baking pan
  3. Set aside
  4. In a large bowl, combine the flour, sugar, 1/4 cup of the cocoa, baking powder and salt
  5. Mix to combine and set aside
  6. In a medium bowl, combine the soy milk, oil and vanilla
  7. Pour the liquid ingredients into the dry ingredients and mix until blended
  8. Spread the batter into the prepared baking pan
  9. In a separate medium bowl, combine the sugar, the remaining 1/2 cup of cocoa and the water
  10. Stir to blend, then pour the mixture over the top of the cake (do not mix)
  11. Bake until a toothpick inserted in the center comes out clean, about 45 minutes
  12. Cool in the pan on a wire rack to cool completely for 60 minutes before slicing
