Vegan Chocolate Mousse Cake Recipe

Ingredients

Makes 6 to 8 servings

Mousse

  • 1 (12-ounce) package firm silken tofu, drained
  • 1/2 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1 cup vegan semisweet chocolate chips, melted

Cake

  • 1 1/2 cups all-purpose flour
  • 1 cup light brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup canola oil
  • 1 tablespoon apple cider vinegar
  • 1 1/2 teaspoons pure vanilla extract
  • 1 cup cold water
  • 2 cups Vegan Chocolate Ganache, slightly cooled

Method

  1. Make the mousse: In a food processor, process the tofu until smooth
  2. Add the sugar and vanilla and process until smooth
  3. Add the chocolate and process until blended
  4. Transfer the mixture to a medium bowl, cover and refrigerate until needed
  5. Make the cake: Preheat the oven to 350°F
  6. Grease a 9-inch round cake pan and set aside
  7. In a large bowl, combine the flour, sugar, cocoa, baking soda and salt and mix until blended
  8. Stir in the oil, vinegar, vanilla and water and mix well
  9. Scrape the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes
  10. Set aside to cool for 10 to 15 minutes before inverting it onto a wire rack to cool completely before assembling
  11. Use a serrated knife to cut the cake in half horizontally, creating 2 layers
  12. Frost the top of one layer with the mousse
  13. Top with the remaining cake layer
  14. Pour the ganache over the cake and refrigerate for 30 minutes, to cool before slicing
