Ingredients
Makes 6 to 8 servings
Mousse
- 1 (12-ounce) package firm silken tofu, drained
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- 1 cup vegan semisweet chocolate chips, melted
Cake
- 1 1/2 cups all-purpose flour
- 1 cup light brown sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup canola oil
- 1 tablespoon apple cider vinegar
- 1 1/2 teaspoons pure vanilla extract
- 1 cup cold water
- 2 cups Vegan Chocolate Ganache, slightly cooled
Method
- Make the mousse: In a food processor, process the tofu until smooth
- Add the sugar and vanilla and process until smooth
- Add the chocolate and process until blended
- Transfer the mixture to a medium bowl, cover and refrigerate until needed
- Make the cake: Preheat the oven to 350°F
- Grease a 9-inch round cake pan and set aside
- In a large bowl, combine the flour, sugar, cocoa, baking soda and salt and mix until blended
- Stir in the oil, vinegar, vanilla and water and mix well
- Scrape the batter into the prepared pan and bake until a toothpick inserted in the center comes out clean, 30 to 35 minutes
- Set aside to cool for 10 to 15 minutes before inverting it onto a wire rack to cool completely before assembling
- Use a serrated knife to cut the cake in half horizontally, creating 2 layers
- Frost the top of one layer with the mousse
- Top with the remaining cake layer
- Pour the ganache over the cake and refrigerate for 30 minutes, to cool before slicing
