Vanilla Walnut Cookies Recipe

Ingredients

Makes about 2 dozen cookies

  • 1/2 cup vegan margarine
  • ¾ cup sugar
  • 1 1/2 teaspoons pure vanilla extract
  • 2 tablespoons water
  • 2 cups all-purpose flour
  • 1/2 cup ground toasted walnuts
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

Method

  1. In a large bowl, beat together the margarine, sugar and water until well blended
  2. Add the flour, walnuts, baking powder and salt and stir well to form a smooth dough
  3. Preheat the oven to 350°F
  4. Pinch off small pieces of dough and roll them between your hands into balls
  5. Place the dough balls onto an ungreased baking sheet and press down to flatten to about 1/4 inch thick
  6. Bake until lightly browned at the edges, about 15 minutes
  7. Cool for 10 minutes on the baking sheet before removing to a wire rack to cool completely
  8. Store in an airtight container
