Ingredients
Makes 3 dozen cookies
- ¾ cup vegan margarine, softened
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- 2 tablespoons pure maple syrup
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- ¾ cup sesame seeds, lightly toasted Confectioners sugar
Method
- In a large bowl, cream together the margarine and sugar until light and fluffy
- Blend in the vanilla, maple syrup and salt
- Stir in the flour and sesame seeds and mix well
- Roll the dough into a cylinder about 2 inches in diameter
- Wrap it in plastic wrap and refrigerate for 1 hour or longer
- Preheat the oven to 325°F
- Slice the cookie dough into 1/8-inch-thick rounds and arrange on an ungreased baking sheet about 2 inches apart
- Bake until light brown, about 12 minutes
- Cool slightly and roll the warm cookies in confectioners sugar
- When completely cool, store in an airtight container
