Ingredients
Makes about 3 dozen cookies
- ¾ cup creamy peanut butter
- 1/2 cup vegan margarine
- 1/2 cup sugar
- 3 tablespoons water
- 1 teaspoon pure vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 teaspoon salt
Method
- In a large bowl, combine the peanut butter, margarine, sugar, water and vanilla and mix until well blended
- Add the flour, baking powder and salt and stir well to form a smooth dough
- Cover and chill until firm, about 1 hour
- Preheat the oven to 350°F
- Roll out the dough on a lightly floured work surface to a 1/4 inch thickness
- Cut into shapes with cookie cutters or the rim of a small drinking glass
- Use a metal spatula to transfer the cookies to an ungreased baking sheet
- Bake until lightly browned at the edges, 8 to 10 minutes
- Cool the cookies slightly before transferring to a wire rack to cool completely
- Store in an airtight container
