Ingredients
Makes 12 muffins
- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/3 cup creamy peanut butter
- 3 tablespoons vegan margarine
- 1 cup soy milk
- 1/4 cup pure maple syrup
- 1 teaspoon pure vanilla extract
- 1/4 cup seedless raspberry jam or your favorite flavor
- 1/4 cup finely crushed unsalted roasted peanuts
Method
- Preheat the oven to 400°F
- Lightly oil a 12-cup muffin tin or line it with paper liners and set aside
- In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt
- Use a pastry blender or fork to cut in the peanut butter and margarine until the mixture resembles coarse crumbs
- Add the soy milk, maple syrup and vanilla and stir until just mixed
- Do not overmix
- Spoon the batter into the prepared muffin tin
- Use a small spoon to make a well in the center of each muffin and spoon 1 teaspoon of jam into the center of each muffin
- Sprinkle a light dusting of the crushed peanuts on top of each muffin
- Bake for 25 minutes, until golden brown and a toothpick inserted into the center of a muffin comes out clean
- Let cool for 5 minutes
- Serve warm
