Ingredients
Makes 12 muffins
- 1 1/2 cups yellow cornmeal
- 1/2 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/3 cups plain soy milk
- 3 tablespoons canola oil
Method
- Preheat the oven to 400°F
- Lightly oil a 12-cup muffin tin or line it with paper or foil liners and set aside
- In a large bowl, combine the cornmeal, flour, sugar, baking powder and salt
- In a medium bowl, combine the soy milk and oil
- Pour the wet ingredients into the dry ingredients and mix until just moistened
- Spoon the batter into the prepared muffin tin
- Bake until golden brown and firm to the touch or a toothpick inserted in the center comes out clean, 20 to 25 minutes
- Serve warm
