Corn Muffins Recipe

Ingredients

Makes 12 muffins

  • 1 1/2 cups yellow cornmeal
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/3 cups plain soy milk
  • 3 tablespoons canola oil

Method

  1. Preheat the oven to 400°F
  2. Lightly oil a 12-cup muffin tin or line it with paper or foil liners and set aside
  3. In a large bowl, combine the cornmeal, flour, sugar, baking powder and salt
  4. In a medium bowl, combine the soy milk and oil
  5. Pour the wet ingredients into the dry ingredients and mix until just moistened
  6. Spoon the batter into the prepared muffin tin
  7. Bake until golden brown and firm to the touch or a toothpick inserted in the center comes out clean, 20 to 25 minutes
  8. Serve warm
