Ingredients
Makes about 18 biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 1/8 teaspoon ground cayenne
- 1 cup mashed sweet potatoes
- 1/2 cup plus 1 tablespoon plain soy milk
- 1/4 cup canola oil
Method
- Preheat the oven to 425°F
- Lightly oil a baking sheet and set aside
- In a large bowl, combine the flour, baking powder, sugar, salt, allspice, coriander, cumin and cayenne
- In a medium bowl, combine the sweet potatoes, soy milk and oil and blend well
- Add the sweet potato mixture to the flour mixture and mix lightly with a fork until just combined and the mixture forms a soft dough
- Turn the dough out onto a lightly floured surface
- Roll the dough out until it is about 1/2 inch thick and cut into rounds with a floured 2-inch biscuit cutter or the rim of a small drinking glass
- Arrange the biscuits on the prepared baking sheet
- Reshape any leftover dough, cut into biscuits and place on the baking sheet
- Bake until the biscuits are golden brown on top, 16 to 18 minutes
- Serve hot
