Ingredients
Makes about 12 biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ¾ teaspoon salt 1/3 cup vegan margarine
- ¾ cup plain soy milk
Method
- Preheat the oven to 450°F
- Lightly oil a baking sheet and set aside
- In a large bowl, combine the flour, baking powder and salt
- Mix well
- Use a pastry blender or fork to cut in the margarine until the mixture resembles coarse crumbs
- Add the soy milk, stirring just long enough to form a soft dough
- Turn the dough out onto a floured work surface and knead gently until the dough just holds together
- Shape the dough into a 1/2-inch-thick circle, about 8 inches in diameter
- Use a floured 2-inch biscuit cutter or the rim of a small drinking glass to cut the biscuits into rounds
- Arrange the biscuits on the prepared baking sheet, spaced about an inch apart
- Reshape any leftover dough, cut into biscuits and place on the baking sheet
- Bake until golden brown, 8 to 10 minutes
- Serve hot
