Ingredients
Makes 1 loaf
- 1 cup all-purpose flour
- ¾ cup whole wheat flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 ripe bananas
- 1/3 cup apple juice
- 1 teaspoon pure vanilla extract
- 3 tablespoons canola oil
- 1/2 to ¾ cup vegan semisweet chocolate chips
- 1/2 cup chopped walnuts
Method
- Preheat the oven to 350°F
- Lightly oil a 9-inch loaf pan and set aside
- In a large mixing bowl, combine both kinds of flour, the sugar, baking powder, baking soda and salt and set aside
- In a blender or food processor, combine the bananas, apple juice, vanilla and oil and process until well blended
- Add the wet ingredients to the dry ingredients, then fold in the chocolate chips and walnuts, stirring gently until the flour is just moistened
- Do not over mix
- Transfer the batter to the prepared loaf pan
- Bake until firm and a toothpick inserted in the center comes out clean, about 50 minutes
- Cool on a wire rack for about 20 minutes before slicing
