Irish Soda Bread With Golden Raisins Recipe

Ingredients

Makes 1 loaf

  • 1 1/2 cups warm plain soy milk
  • 1 tablespoon cider vinegar
  • 3¾ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 1/2 teaspoons salt
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup golden raisins

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a baking sheet and set aside
  3. In a small bowl, combine the soy milk and vinegar and set aside
  4. In a large bowl, combine the flour, sugar, salt, baking powder and baking soda
  5. Mix until blended
  6. Mix in the raisins and the soy milk mixture to make a soft dough
  7. Turn the dough out onto a lightly floured work surface and knead for 1 minute, then shape into around loaf
  8. Place the loaf on the prepared baking sheet and flatten the loaf with your hands so that it is about 2 to 3 inches high
  9. Use a sharp knife to cut an x-shaped slash into the top of the loaf
  10. Bake until golden brown and a toothpick inserted in the center comes out clean, about 40 to 45minutes
  11. Cool on a wire rack for 20 minutes before slicing
