Ingredients
Makes 4 servings
- 2 small acorn or other round winter squashes, halved lengthwise and seeded
- 4 teaspoons vegan margarine
- 4 teaspoons sugar
- 4 teaspoons bourbon
- 1/4 teaspoon ground allspice
- salt and freshly ground black pepper
Method
- Preheat the oven to 375°F
- Lightly oil a 9 x 13-inch baking pan
- Arrange the squash halves in the prepared pan, cut side up
- Into each squash cavity place 1 teaspoon each of the margarine, sugar and bourbon
- Sprinkle each with allspice and season with salt and pepper to taste
- Cover tightly with foil and bake until tender, about 45 minutes
- Serve immediately
