Ingredients
Makes 4 servings
- 1 medium acorn squash
- 1/2 cup fresh orange juice
- 3 tablespoons pure maple syrup
- 1/2 teaspoon ground cinnamon
- salt and freshly ground black pepper
Method
- Preheat the oven to 350°F
- Lightly oil a 9 x 13-inch baking pan and set aside
- Cut the squash crosswise into half-inch rings and remove seeds
- Arrange the squash rings in the prepared baking pan and sprinkle with orange juice, maple syrup, cinnamon and salt and pepper to taste
- Cover tightly with foil and bake until tender, about 45 minutes
- Serve immediately
