Ingredients
Makes 4 servings
- 1 large spaghetti squash
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 1/2 cups ripe grape tomatoes, halved lengthwise
- 1/4 cup shredded fresh basil leaves
- salt and freshly ground black pepper
Method
- In a large pot of boiling water, cook the squash until it is soft when pierced with a fork, 30 to 40minutes
- Halve the squash lengthwise, scoop out the seeds and discard
- Use a fork to scrape out the strands of squash and transfer them to a bowl
- Discard the shell
- In a large skillet, heat the oil over medium heat
- Add the garlic and cook until fragrant, 30seconds
- Add the cooked squash, tomatoes, basil and salt and pepper to taste
- Cook, stirring, until hot, about 5 minutes
- Serve immediately
