Ingredients
Makes 4 servings
- 1 tablespoon canola or grapeseed oil
- 1 small yellow onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 ripe tomato, chopped
- 1 (10-ounce) package frozen chopped spinach, thawed
- 1/4 cup water
- salt
Method
- In a large skillet, heat the oil over medium heat
- Add the onion, cover and cook until softened, 5minutes
- Add the garlic and ginger and cook until fragrant, 30 seconds
- Stir in the cumin, coriander and garam masala
- Add the tomato, spinach and water
- Season with salt to taste
- Simmer, uncovered, until the spinach is cooked and the flavors are blended, about 15 minutes
- Transfer the spinach mixture to a blender or food processor and puree
- Return the pureed spinach to the saucepan and heat until hot
- Serve immediately
