Indian Spinach Saag Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon canola or grapeseed oil
  • 1 small yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 ripe tomato, chopped
  • 1 (10-ounce) package frozen chopped spinach, thawed
  • 1/4 cup water
  • salt

Method

  1. In a large skillet, heat the oil over medium heat
  2. Add the onion, cover and cook until softened, 5minutes
  3. Add the garlic and ginger and cook until fragrant, 30 seconds
  4. Stir in the cumin, coriander and garam masala
  5. Add the tomato, spinach and water
  6. Season with salt to taste
  7. Simmer, uncovered, until the spinach is cooked and the flavors are blended, about 15 minutes
  8. Transfer the spinach mixture to a blender or food processor and puree
  9. Return the pureed spinach to the saucepan and heat until hot
  10. Serve immediately
