Ingredients
Makes 4 to 6 servings
- 2 pounds Yukon Gold potatoes
- 1/2 cup plain unsweetened soy milk
- 4 tablespoons vegan margarine
- salt
Method
- Peel the potatoes, if desired and cut them into uniform chunks
- Transfer the potatoes to a large pot with enough salted water to cover
- Bring to a boil, then reduce heat to medium-low, cover and simmer until they are soft when pierced, 20 to 25 minutes
- In a small saucepan, heat the soy milk and margarine over medium heat until hot and the margarine is melted
- Drain the potatoes well, then return to the pot
- Mash with a potato masher or ricer
- Stir in the hot soy milk mixture
- Season with salt to taste
- Serve immediately
